


"Junmai Senbei" is a type of rice cracker made in the late 1950s using salad oil, which was still a luxury material at the time, to give it a moderate saltiness and a soft texture. At the time, soy sauce flavored rice crackers were the norm, so rice crackers that used only oil and salt were unusual and were very well welcomed as a new type of rice cracker.
Characterized by its thickness, crispy texture, and rich, salty flavor, Junmai Senbei has become popular mainly in northern Japan and has been a beloved product for over 50 years.
