About Ingredients

What does it mean of “This product is manufactured in a factory that also produces products containing shrimp.”?

Regarding the seven specified ingredients (wheat, eggs, milk, buckwheat, peanuts, shrimp, and crab), even minute amounts of allergens can cause severe symptoms, so the label is there to warn customers with such allergies. At Risshodo’s factory, we manufacture products that contain shrimp. We do not manufacture products that contain eggs or dairy products.

Are there any ingredients other than rice?

Only non-glutinous rice. “Junmai Senbei” is made from 100% non-glutinous rice.

What seasonings are used to flavor your products?

We use salt and umami seasonings. The mixing ratio is our company’s secret recipe.

What is umami seasoning?

It’s an amino acid.

What kind of salt used to produce these rice crackers?

We use refined salt

What about allergy information?

After thorough investigation and confirmation, there are seven specific ingredients required to be labeled under the Food Sanitation Act (wheat, eggs, milk, buckwheat, peanuts, shrimp, crab) and the 21 ingredients equivalent to the specific ingredients that are encouraged to be labeled (abalone, squid, salmon roe, orange, kiwi fruit, beef, walnuts, salmon, mackerel, soybeans, chicken, pork, matsutake mushrooms, peaches, yams, apples, gelatin, bananas, sesame, cashew nuts, almonds) when they are used as ingredients. Soybeans are one of the ingredients in our “Junmai Senbei” crackers.

Food Safety

What measures do you take to prevent foreign matter contamination?

In the factory, metal detectors are installed at key points, and cameras and weight checkers are used for constant checking. For details, please see the [Safety standards] page.

Expiration date and storage method

How to store the product?

Store at room temperature away from heat and humidity.

I am concerned about moisture after opening the package.

After opening the large bag, place it in an airtight container or bag and store it at room temperature. After opening the small bag, please consume it as soon as possible for hygienic reasons.

Can I eat products that have passed their ‘best before date’?

The ‘best before date’ indicates the date that the product can be eaten deliciously. It does not mean that the product is immediately inedible after the expiration date, but the flavor is likely to deteriorate, so please consume it as soon as possible.

Others

Is there a recommended way to eat it?

This is just our personal opinion, but we’d like to share it with you.

  • Because “Junmai Senbei” contains salt, eating it with water in the summer will also help prevent heatstroke. Junmai Senbei is also easy to eat even when your stomach is bloated.
